Depuis, les saisons estampillées par la précocité durant lesquelles il a parfois fallu rapatrier des vendangeurs alors encore en congés, se sont multipliées. « À compter de 2003, qui marque un véritable point de bascule, pas moins de sept vendanges ont commencé en août. Et depuis 2017, on recense une année précoce sur deux », confirme l’œnologue. Variations, imprévisibilité, amplitudes : dans la terre comme à la vigne, le phénomène bouscule, et la Champagne tend à passer d’un climat frais à tempéré.\nSoumise à une augmentation constante des températures moyennes et à des hivers moins froids, la vigne se réveille parfois plus tôt – au risque de devoir faire face à des gels de printemps potentiellement destructeurs. Le nombre de jours entre la floraison et les vendanges s’est également réduit, en passant de 100 à 87 jours de moyenne. Une accélération qui influe sur les caractéristiques des grains, avec un taux de sucre plus élevé et une acidité à la baisse. Nous sommes en 2015, et « au-delà des conséquences avérées sur le cycle d’une vigne qui réagit différemment, c’est sur l’équilibre et l’arôme de notre matière première, le raisin, que l’impact du réchauffement climatique se fait alors sentir ». La donne change, et face à ces profils de vins en pleine (r)évolution, le chef de caves de la Maison Ruinart et ses équipes se demandent « comment isoler ces chardonnays si atypiques – une nouvelle matière en soit – afin d’envisager une cuvée à leur image ». Du re-travail des assemblages en passant par un séjour en foudre, la recherche fait son chemin.
